Voluptuous: Peach and Jasmine Iced Tea

Made with fresh peach puree, this voluptuous Peach and Jasmine Iced Tea is more substantial than the typical store-bought varieties: luscious, juicy, and velvety in texture.

The tropical and floral sweetness of ripe peaches partners perfectly with the enchanting fragrance of jasmine.  The base tea lends a subtle bitterness and rounded mouthfeel to the mocktail balancing the succulent and honeyed flavors of the peach.

It’s alluring, vibrant, and refreshing.  A far cry from your average thirst-quencher.

Serves 1
Preparation time: 15 mins (including preparation and cooling time)

Ingredients

  • 1 small peach, peeled and roughly cut into small pieces (approx. 65g)
  • ½ oz. (15 ml) freshly squeezed lime juice (approx. ½ lime)
  • 3 oz. (90 ml) jasmine tea, cooled
  • ¼ oz. (7.5 ml) agave nectar
  • 1 oz. (30 ml) soda water or sparkling water
  • Ice

To garnish:

  • 3 thin slices of peach, fanned and pierced onto a cocktail stick
  • 1 sprig of mint

Equipment

  • Immersion hand blender
  • Jigger or measuring spoons
  • Citrus juicer
  • Cocktail spoon
  • Tumbler

Instructions

  1. First, make the jasmine tea.
  2. Pour just-boiled, but not boiling water over the tea and stew for 3-5 minutes.
  3. Remove the tea bag or strain the tea leaves (if using loose leaves).  Set aside to cool.
  4. Next, make the peach puree.
  5. Using an immersion hand blender, liquidize the peach to a smooth pulp.
  6. Finally, assemble the mocktail.
  7. In the glass, add the peach puree, lime juice, cooled jasmine tea and agave nectar.
  8. Fill the glass with ice and top with sparkling water.
  9. Use a cocktail spoon to gently mix the ingredients together.
  10. Garnish with peaches and a sprig of fresh mint.

Should I use jasmine tea bags or loose leaf tea?
The choice between jasmine tea bags and loose leaf tea is a matter of personal preference.  If you prefer the convenience and easy cleanup, jasmine tea bags are a great option.  Loose leaf tea tends to have a stronger character as it allows the tea to expand fully and release more flavor.  However, after steeping, you’ll need to remove the tea leaves using a tea infuser or strainer. 

How do I cool the jasmine tea?
To quickly cool the jasmine tea, pour it into a large flat bowl to expose as much liquid to the air as possible.  As a last resort, you could put the tea in the fridge too.  

What equipment do I need to make the peach puree?
An immersion hand blender is a quick and easy way to liquidize the peach to a pulp.  If you don’t have a hand blender, any type of blender could work as an alternative.

Can I use canned or frozen peaches for the puree?
Fresh, ripe peaches will impart the best flavor.  However, if they are not avaialble you can use canned or frozen peaches instead.  Remember to rinse or defrost the peaches before you puree them.

Can I substitute lemon juice for lime juice?
Lime juice compliments the peach flavor well.  However, you can substitute it with lemon juice if you prefer.

Can I substitute the agave nectar for another sweetener?
Yes.  You can swap out the agave nectar for the sweetener of your choice.  Honey, simple syrup, or sugar could all work for this recipe.  Depending on the sweetness of your peaches, you may need to add more or less sweetener.  It’s best practice to start with a small amount and adjust to your desired sweetness level.

Should I add the ice before or after mixing the ingredients?
To avoid splashing the mocktail mixture everywhere, it’s recommended to add the peach puree, lime juice, cooled jasmine tea, and agave nectar to the glass before adding the ice.  Then, fill the glass with ice and top with soda water.

Can I use a regular spoon instead of a cocktail spoon?
Yes.  A regular spoon is absolutely fine if you don’t have a cocktail spoon.  The benefit to a cocktail spoon is that it’s typically longer than regular spoons making it easier to stir ingredients in tall glasses.  The spiral handle design also allows for smoother and more controlled stirring that helps to blend the ingredients without excessive agitation.

Are the garnishes necessary?
The peach and fresh mint garnish are optional but add a nice visual touch and aroma to the drink.

Can I make this recipe ahead of time?
For the best taste, it’s recommended to assemble the mocktail just before serving.  However, you can prepare the jasmine tea, peach puree and lime juice ahead of time and store them separately in the fridge until you are ready to use them.  They should keep for up to 2 days.
