Seibo Maria: Alcohol-Free Wasabi Bloody Mary

Ingredients

  • ½ lemon, chargrilled – approx. ½ oz. (15 ml) of lemon juice
  • 1 lime wedge – approx ¼ oz. (7.5 ml) of lime juice
  • 5 oz. (150 ml) tomato juice
  • ½ oz. (15 ml) olive brine
  • ¼ teaspoon (1.25 ml) wasabi paste
  • 2 dashes of Tabasco sauce
  • 4 dashes of Worcestershire sauce
  • 1 pinch of ground pepper
  • 1 pinch of smoked paprika
  • 1 pinch of celery salt + more for the rim to garnish
  • 1 parsley sprig (garnish)
  • 3 green olives (garnish)
  • 1 stick of celery (garnish)
  • Ice

Equipment

  • Griddle pan (+ stove top)
  • Jigger or measuring spoons
  • Citrus juicer
  • Cocktail shaker
  • Cocktail spoon
  • Pint glass

Instructions

  1. Pour celery salt onto a small plate.
  2. Run a wedge of lime around the rim of the pint glass.
  3. Roll the outer edge of the rim in the celery salt, then fill the glass with ice and put aside.
  4. Heat a griddle until very hot.
  5. Place half a lemon, cut side down, onto the griddle for 2-3 minutes until charred.
  6. Into a shaker, squeeze the juice from the lemon and lime and drop in the used peels.
  7. Add the tomato juice, olive brine, wasabi paste, Tabasco sauce, Worcester sauce, pepper, smoked paprika, and celery salt.
  8. Throw in a handful of ice and shake for 15-20 seconds until the outside of the shaker is very cold.
  9. Strain the mixture into the prepared pint glass.
  10. Garnish with a stick of celery, sprig of parsley, and 3 olives on a cocktail stick.

Tip:  Feel free to experiment with your garnish selection.  The sky’s the limit when it comes to options, but here are some tried-and-tested classics: pickles, jalapeno, pickled asparagus, shrimp, bacon, and/or onion rings.
